Lighter Beef and Bean Enchiladas

This is a lighter version of enchiladas. When I make this dish, we don't feel as "stuffed" as we usually do....lol. I'm sure you could use regular ingredients instead of the fat free ones. Show more

  1. Brown the ground beef in nonstick skillet.
  2. Add onion and green pepper and cook until vegetables are soft.
  3. Add beans and mix well.
  4. Wrap tortillas in paper towels.
  5. Warm in microwave for 45 seconds on high.
  6. Add 1/4 cup mixture to the middle of tortilla.
  7. Fold sides over and roll.
  8. Place filled tortillas in baking dish seam side down.
  9. Prepare sauce by adding the remaining ingredients to saucepan.
  10. Simmer to blend ingredients.
  11. Pour sauce over the filled tortillas.
  12. Cover with foil and warm in oven at 350 for 40 - 45 minutes.
