Lightened up Steakhouse Potato Salad

Ingredients
- 3 lbs red potatoes, cubed
- 4 slices center-cut bacon
- 4 stalks celery, diced
- 4 green onions, sliced (scallions)
- 2 garlic cloves, finely minced
- 1⁄2 cup fat free Greek yogurt
- 1⁄2 cup reduced-calorie mayonnaise
- 1⁄2-1 tablespoon salt
- 1⁄2 teaspoon fresh coarse ground black pepper
Directions
- Cook cubed potatoes in salted water, using ½ T. salt, until fork tender. Drain and cool slightly.
- Microwave cook bacon until crisp, then blot on paper towel until cool enough to handle; crumble.
- Mix together Greek yogurt and mayonnaise until creamy.
- In large bowl, add slightly warm potatoes, garlic, onions,bacon, and celery. Sprinkle with pepper, and add any additional salt to taste. Pour in yogurt-mayonnaise mixture and combine gently.
- May be eaten warm, or chill to intensify flavors.
