Light Tropical Island Muffins

Recipe created by my 6th grader and a friend for a class project on healthy snacks.

Directions

  1. Preheat oven to 400F; spray mini-muffin tin with non-stick spray.
  2. Sift together flour, salt, baking powder, cinnamon, nutmeg and brown sugar.
  3. Peel, core and chop apple.
  4. Mix liquid ingredients together and add to dry ingredients. Mix until well blended. Do not beat.
  5. Drop batter by rounded teaspoonfuls into mini-muffin tin. Fill about 2/3 full.
  6. Back for about 13 minutes until light golden brown.
  7. Turn out onto parchment paper over wire rack to cool. Store in air-tight container and/or store in freezer and take out when needed as a snack!
  8. Note: This muffin is not too sweet and has a mild fruity flavor. Not overly spicy -- just enough.
