Light Cherry Dessert

I got a craving for baked cherries, so I found a recipe from Cooks.com and lightened it up. The cherries rise to the top, and the batter bakes becomes custard-like. This dessert can also be prepared using blueberries, plums, peaches, apples or other fruits that are in season. I used frozen pitted cherries, which cuts down on the prep time. Show more

  1. Preheat oven to 350°F.
  2. Wash cherries; remove stems and pits.
  3. Place pitted cherries in an 8 cup oven-proof dish.
  4. In the bowl of a food processor or blender, combine milk, eggs, splenda, sugar, salt, and melted margarine. Blend until smooth. Add flour, blend briefly - do not overmix once flour is added.
  5. Pour batter into baking dish, covering cherries, and bake for 30 minutes or until top is light golden brown and center is done.
  6. Sift confectioners' sugar over the top and serve while still warm.
