Light Caramelized Onion Dip

I think this one was inspired by a Cooking Light recipe. Four of us devoured this. You may be able to serve more people, but it's so good, you may not! Show more

Serves: 4

Yields: 1 bowl

Ingredients

  • 4  tablespoons light butter
  • 2  large onions, finely chopped
  • 4  ounces  neufchatel cheese, softened
  • 12 cup low-fat sour cream
  • 12 cup  plain  fat free Greek yogurt
  •  salt and pepper

Directions

  1. Melt the butter in a large skillet over medium heat. Add in the onions and cook, stirring regularly, until the onions are light brown and have caramelized. (This process may take 20-30 minutes. Just keep stirring. Just keep stirring.).
  2. Remove the onions from the heat and allow to cool to room temperature.
  3. Once the onions have cooled, add in the neufchatel, sour cream and yogurt. Season with salt and pepper.
  4. Refrigerate until ready to serve; serve with chips, carrots, celery or whatever you'd like.
