Light Autumn Apple Cake

A tasty apple cake. Relatively low in fat. From Eating Light and Loving It.

Ingredients

  • 2  cups  peeled and grated apples (about 4 apples)
  • 12 cup sugar
  • 1 14 cups flour
  • 1  egg white, beaten
  • 14 cup  oil
  • 14 cup  chopped walnuts (optional)
  • 1  teaspoon cinnamon
  • 1  teaspoon baking soda
  • 12 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients and walnuts, if using, in a mix bowl.
  3. Add apples, egg white and oil.
  4. Stir well.
  5. This will be a very thick batter.
  6. Spray square baking pan (8 x 8 inch or 9 x 9) with nonstick spray.
  7. Pour batter into pan.
  8. Bake for 30-35 minutes.
