Light Asian Vermicelli

Ingredients
- 3 ounces rice vermicelli
- 1⁄2 small cucumber, sliced
- 1⁄4 cup daikon radish, shredded
- 2 tablespoons pickled ginger
- 1 small tomatoes, wedged
- 1 teaspoon sesame seeds
DRESSING
- 1⁄4 cup sake
- 2 tablespoons honey
- 1⁄2 cup rice wine vinegar
- 1⁄4 cup tamari
- 1⁄4 cup mirin
Directions
- To prepare Dressing:.
- Bring sake to a boil and remove from heat. Stir in honey and let cool. Add remaining ingredients.
- To prepare noodle salad:.
- Boil vermicelli noodles and drain.
- Mix with prepared dressing.
- Add garnishing ingredients and serve.
