Libby's Spinach Souffle

For Libby again. She says that even people who don't like spinach will like this one.

Ingredients

  • 4  eggs, separated
  • 1  tablespoon butter
  • 3  tablespoons  soft breadcrumbs or 3  tablespoons  cracker crumbs
  • 3  tablespoons half-and-half
  • 12 teaspoon salt
  • 12 teaspoon sage
  • 12 teaspoon pepper
  • 1  cup  cooked spinach

Directions

  1. Separate eggs. Beat egg whites.
  2. Mix the rest of ingredients.
  3. Fold in the beaten egg whites.
  4. Place mixture in a heavily greased double boiler.
  5. Steam for one hour.
