Lettuce Refresh and Relax

Ingredients
- 1 iceberg lettuce
- 1 avocado, diced
- 2 spring onions, finely sliced
- 2 tablespoons olive oil
- 2 small courgettes, diced
- 1 finely chopped red chili pepper
- 200 g cooked brown shrimp
- 1 lime, juice and zest of, plus
- 1 extra lime, cut into wedges to serve
- 2 -3 dashes Tabasco sauce
- finely chopped chives
Directions
- 1. Put the avocado and spring onions in a bowl. Season well and mix everything together.
- 2. Heat the oil in a pan over a low heat then stir in the courgette and chilli. Cook for 1 minute, then stir in the shrimps, lime zest and juice, Tabasco and 2 tbsp water. Heat through for a minute, then spoon into the bowl with the chopped vegetables. Season well.
- 3. Cut the Iceberg lettuce in half then arrange some of the cups of lettuce on each plate, dividing them equally.
- 4. Spoon over the warm shrimp mixture, then scatter with the chives and serve with the lime wedges.
