Ingredients
- 1 cup brown rice, cooked
- 1 cup lentils, cooked
- 2 medium onions, sliced into strips
- 3 medium carrots, diced
- 1 cup Baby Spinach
- 1 tablespoon oil
- 3 tablespoons balsamic vinegar
- salt and pepper
Directions
- heat oil, add onions and cook for 15 min until black.
- ad carrots (4 min), stir in spinach.
- combine rice, lentils, and veggies with vinegar and salt.
