Lentil Soup

A line cook that used to work at the Lancer's Club in El Paso, TX gave me this recipe. So good!

  1. Rinse lentils and place in a saucepan. Cover with water by one inch and heat over medium heat.
  2. In a skillet, cook the bacon until crisp, add to lentils. Do not drain bacon grease. In the bacon grease, add tomato, onion and garlic. Saute until onion is translucent. Add to lentils. Pull the leaves off the cilantro stems and add to the pot as well. Continue to cook the lentils, adding water as necessary, until done. Approximately 30 minutes to an hour.
  3. Can use beef broth in addition to, or in place of, water.
