Lentil Meatballs

Yields: 20-25 medium meatballs
Ingredients
- 1 cup dried lentils
- 1 bay leaf
- 1 medium onion, finely chopped
- 4 -5 white mushrooms, chopped
- 2 teaspoons dried coriander
- 1 1⁄2 teaspoons dried oregano
- 1⁄2 cup breadcrumbs
- 2 tablespoons tomato sauce (any kind, or pasta sauce)
- 1 dash salt
- 1 dash pepper
Directions
- Cook lentils according to directions with the bay leaf.
- Drain lentils and let cool.
- Combine all ingredients, mashing lentils with fingers.
- Form into balls and place in oiled pan.
- Bake @ 350 for 20-30 minutes.
