Lentil Chili

Ingredients
- 1 lb lentils
- 2 onions, chopped
- 1 green pepper, chopped
- 2 tablespoons garlic, chopped
- 2 (15 1/2ounce) cans red kidney beans, drained
- 1 (15 1/2ounce) can chopped tomatoes
- 1 (6 ounce) can tomato paste
- 2 tablespoons chili powder
- 2 teaspoons salt
- 1⁄8 teaspoon pepper
- 1⁄8 teaspoon cayenne
- 1⁄2 teaspoon caraway seed
- 1 dash liquid smoke (optional)
- 5 -6 cups water
Directions
- boil water and cook lentils for 30 min covered.
- add remaining ingredients cook covered for 30 min more.
- (optional) insert immersion blender and blend for a couple seconds to thicken up the chili but leave some "chunks".
