Lentil Chicken Dinner

Ingredients
- 1 1⁄2 cups dry lentils
- 6 cups water
- 2 lbs ground chicken
- 1 red onion
- 1⁄2 orange bell pepper
- 2 small white zucchini, diced
- 3 portobella mushrooms, diced
- 1 small jar sliced green olives
- 1 tablespoon olive oil
Directions
- Cook lentils in water until tender, drain.
- Saute mushrooms in olive oil. Add ground chicken and saute until browned. Add remaining ingredients except olives and saute until tender. Add lentils to chicken mixture and add olives. Great topped with crushed red peppers or feta cheese!
