Lemony Wilted Kale and Beets

Ingredients
- 1 bunch kale, thinly sliced
- 1 cup thinly sliced beet
- 2 tablespoons fresh lemon zest
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
Directions
- In bowl, toss together kale, beets and lemon zest. Add lemon juice, olive oil and salt. Toss well.
- Set aside for 10 minutes or until wilted slightly.
