Lemony Marinated Beets

Serves: 4-6
Ingredients
- 2 medium beets, scrubbed
- 3 tablespoons lemon juice
- 2 tablespoons coarsely chopped parsley
- 1 tablespoon red wine vinegar
- 2 garlic cloves, quartered
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon salt
- black pepper
- 1⁄2 cup olive oil
Directions
- Place beets on baking sheet and bake for 1 hour, until tender.
- Let beets cool until just cool enough to handle, then rub off skins.
- Cut of ends of beets and cut into ¾ inch slices. Transfer to a bowl.
- In food processor, process lemon juice, parsley, vinegar, garlic, cumin, oregano, salt and pepper to taste until smooth. Slowly add olive oil.
- Pour over beets and toss well. Cover and refrigerate for at least 3 hours before serving, or up to 3 days.
