  1. Place beets on baking sheet and bake for 1 hour, until tender.
  2. Let beets cool until just cool enough to handle, then rub off skins.
  3. Cut of ends of beets and cut into ¾ inch slices. Transfer to a bowl.
  4. In food processor, process lemon juice, parsley, vinegar, garlic, cumin, oregano, salt and pepper to taste until smooth. Slowly add olive oil.
  5. Pour over beets and toss well. Cover and refrigerate for at least 3 hours before serving, or up to 3 days.
