Lemony Chicken Saute

The lemon in this is subtle and keeps the taste light.

  1. Flatten each breast half to about 1/4" thick.
  2. Melt margarine in 10" skillet until sizzling.
  3. Add chicken, garlic, salt, and pepper.
  4. Cook over med. heat, turning chicken occasionally, until no longer pink (5-6 minutes).
  5. Place on serving platter, keep warm.
  6. Add lemon juice to drippings in pan.
  7. Add green onions and mushrooms.
  8. Continue cooking, stirring constantly until heated (2-3 minutes).
  9. Spoon over chicken.
  10. Garnish with lemon slices.
