Lemony Blintz Souffle

Ingredients
Souffle
- 1⁄2 cup sugar
- 2 large eggs
- 1 cup flour
- 1 tablespoon baking powder
- 1⁄4 cup milk
- 1 teaspoon vanilla
- 1 pinch salt
- 1⁄2 cup butter, melted and cooled
Filling
- 2 eggs
- 1⁄2 cup sugar
- 1 lb cream cheese
- 1 lb ricotta cheese
- 1 lemon, juice of
Directions
- Mix together all souffle ingredients except butter.
- Stir in the melted butter until completely combined.
- Mix together all filling ingredients.
- Pour half the batter into a lightly greased 9x13-inch Pyrex dish.
- Spoon the filling on top.
- Pour remaining batter over the filling.
- Bake at 350°F for 1 hour or until puffed and golden brown.
- Garnish with fresh fruit and powdered sugar.
