  1. pound chicken pieces to 1/4 inch thick.
  2. heat 2 tbsp oil over high heat.
  3. add chicken, brown, and remove from pan.
  4. add wine and deglaze pan.
  5. add salt, pepper, lemon and remaining oil.
  6. bring to a boil over high heat.
  7. return chicken to pan and boil until chicken is done.
