Lemon Ricotta Pancakes

Yields: 10-12 pancakes
Ingredients
- 1 cup ricotta cheese
- 2 tablespoons sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon cinnamon
- 2 eggs
- 2⁄3 cup milk
- 1 tablespoon lemon juice
Directions
- Combine all ingredients in a bowl until blended.
- Melt butter or margarine in a frying pan or griddle over medium-high heat.
- Pour batter onto pan and cook until batter begins to bubble or pancakes are brown around edges.
- Flip and cook on other side.
