Lemon Posset With Berries

Ingredients
- 2 cups heavy cream
- 2⁄3 cup granulated sugar
- 1 tablespoon fresh lemon zest
- 6 tablespoons fresh squeezed lemon juice
- 1 cup fresh raspberries or 1 cup blueberries
Directions
- Combine cream, sugar, and lemon zest in medium heavy saucepan and bring to a boil over medium heat.
- Continue to boil for 10-12 minutes, stirring frequently and making sure sugar is dissolved. Remove from heat momentarily, if mixtures begins to boil over.
- Remove from heat, add lemon juice and allow to cool about 20 forming a skin on top. Strain the mixture through a sieve, then pour mixture into small espresso sized cups.
- Place cups on a small baking sheet, then refrigerate for 2-3 hours. Garnish with berries before serving.
