Lemon Posset With Berries

  1. Combine cream, sugar, and lemon zest in medium heavy saucepan and bring to a boil over medium heat.
  2. Continue to boil for 10-12 minutes, stirring frequently and making sure sugar is dissolved.  Remove from heat momentarily, if mixtures begins to boil over.
  3. Remove from heat, add lemon juice and allow to cool about 20 forming a skin on top.  Strain the mixture through a sieve, then pour mixture into small espresso sized cups.
  4. Place cups on a small baking sheet, then refrigerate for 2-3 hours.  Garnish with berries before serving.
