Lemon Poppy Seed Madeleines

Ingredients
- 1⁄2 cup sugar
- zest from 1 lemon
- 2 large eggs
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon almond extract
- 1⁄2 teaspoon lemon extract
- 3⁄4 cup all-purpose flour
- 1 tablespoon all-purpose flour, for dusting
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 tablespoon poppy seed
- 1⁄2 cup unsalted butter, melted
- cooking spray
Directions
- Add the sugar and lemon zest to a medium bowl.
- Add the eggs and whip with an electric mixer for 4-5 minutes—the mixture should be thick and pale.
- Add the extracts and lemon juice and mix to combine.
- Sift the flour, baking powder and salt into the egg mixture and mix until just a few streaks of flour are left.
- Pour in the poppy seeds and butter. Mix to combine.
- Chill the mixture and the madeleine pan for 45 minutes-1 hour.
- Spray the pan with non-stick baking spray and dust with one tablespoon of flour. Tap out the excess.
- Place about one tablespoon of batter into the molds and bake for 8-10 minutes.
