Lemon Poppy Seed Madeleines

Classic madeleines get a makeover with lemon and poppy seeds!

  1. Add the sugar and lemon zest to a medium bowl.
  2. Add the eggs and whip with an electric mixer for 4-5 minutes—the mixture should be thick and pale.
  3. Add the extracts and lemon juice and mix to combine.
  4. Sift the flour, baking powder and salt into the egg mixture and mix until just a few streaks of flour are left.
  5. Pour in the poppy seeds and butter. Mix to combine.
  6. Chill the mixture and the madeleine pan for 45 minutes-1 hour.
  7. Spray the pan with non-stick baking spray and dust with one tablespoon of flour. Tap out the excess.
  8. Place about one tablespoon of batter into the molds and bake for 8-10 minutes.
