Lemon Poppy Seed Bread

Ingredients
- 1⁄2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1 2⁄3 cups flour
- 3⁄4 cup buttermilk
- 1 lemon, zest of
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1 tablespoon poppy seed
Directions
- Preheat oven to 350 degrees. Spray a 8" x 4" loaf pan with baking spray. In a mixing bowl, combine sugar and butter and beat about 3 minutes until light and fluffy. Add eggs, 1 at a time, mixing after each until incorporated. Add flour, buttermilk, lemon zest, salt and baking soda, mixing until just incorporated. Stir in poppy seeds.
- Pour batter into prepared pan and bake about 40-45 minutes until a skewer or knife inserted in the center comes out clean. It may be necessary to tent with foil for the last 10-15 minutes of baking time if the top is becoming too brown. Cool in pan about 10 minutes and then turn out onto a wire rack covered in wax paper to cool completely. Glaze with lemon glaze
- Wrap in plastic wrap and refrigerate if not serving immediately.
