Lemon Pecan Cake

Ingredients
- 1 lb butter, room temperature
- 2 1⁄4 cups sugar
- 6 large eggs
- 2 teaspoons lemon extract
- 1 teaspoon vanilla extract
- 4 cups flour, sifted
- 1 tablespoon baking powder
- 2 cups pecans, chopped
- 1 1⁄2 cups golden raisins
Directions
- Preheat oven to 350.
- Cream butter and sugar well. Add eggs, one at a time, mixing well. Add lemon and vanilla extracts along with the eggs.
- Add flour and baking powder, mixing well after each addition. Stir in the nuts and raisins by hand.
- Bake in 3 large loaf pans at 350 for 50-55 minutes. The cake is done when a toothpick inserted into the center comes out clean.
