Lemon Myrtle and Strawberry Jam

Yields: 65 grams

Ingredients

  • 12 cup  quartered strawberry
  • 12 cup water
  • 14 cup white sugar
  • 14 teaspoon  dried  ground lemon myrtle
  • 18 teaspoon  ground lemon myrtle

Directions

  1. Place water and sugar in a heavy based saucepan over low to medium heat. Stir using a wooden spoon until sugar has dissolved.
  2. Add strawberries and ¼ tspn of Lemon Myrtle, stirring regularly, bring to a simmer until strawberries have softened.
  3. Increase the heat to medium and bring to the boil, stirring occasionally to prevent burning, until mixture has thickened to a jam like consistency.
  4. Remove from heat, and stir in remaining Lemon Myrtle, returning to heat to release flavours.
