Lemon Muffins/Bread

This makes delicious mini muffins or a loaf of lemon buttermilk bread!

  1. Preheat oven to 350*. Cream butter & sugar. Beat in eggs, add remaining ingredients but use rind of lemon only. Put in greased loaf pan or muffin pans. (Loaf takes about an hour- mini muffins about 20 minutes, regular muffins about 25-30 min.).
  2. For glaze: Juice of lemon, 1/2 cup sugar- poke holes and pour over top of baked muffins.
