Lemon Muffins/Bread

Ingredients
- 3⁄4 cup butter
- 1 1⁄2 cups sugar
- 3 eggs
- 2 1⁄4 cups flour
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon baking soda
- 3⁄4 cup buttermilk
- 1 fresh lemon rind
- 3⁄4 cup chopped nuts (optional)
Directions
- Preheat oven to 350*. Cream butter & sugar. Beat in eggs, add remaining ingredients but use rind of lemon only. Put in greased loaf pan or muffin pans. (Loaf takes about an hour- mini muffins about 20 minutes, regular muffins about 25-30 min.).
- For glaze: Juice of lemon, 1/2 cup sugar- poke holes and pour over top of baked muffins.
