Lemon Lime Syllabub

Ingredients
- 1⁄4 cup superfine sugar
- 1 small lemon
- 1 lime
- 1⁄4 cup marsala or 1⁄4 cup sherry wine
- 1 1⁄4 cups heavy cream
Directions
- Juice lemon and lime and pare the rind. Same some extra rind for decorating, if desired.
- Put sugar, juice, rind, and sherry in a bowl then mix well and set aside to infuse for 2 hours.
- Add the cream to the juice mixture and whisk until it just holds its shape.
- Spoon into 4 tall serving glasses and chill in the refrigerator 2 hours. Serve, decorating with rind if you want.
