  1. Juice lemon and lime and pare the rind. Same some extra rind for decorating, if desired.
  2. Put sugar, juice, rind, and sherry in a bowl then mix well and set aside to infuse for 2 hours.
  3. Add the cream to the juice mixture and whisk until it just holds its shape.
  4. Spoon into 4 tall serving glasses and chill in the refrigerator 2 hours. Serve, decorating with rind if you want.
