Lemon Kiss Cookies

Nice variation from the original version. Everyone in my family loves them.

Yields: 6 dozen

Ingredients

  • 1 12 cups butter or 1 12 cups margarine, softened
  • 34 cup sugar
  • 1  tablespoon  lemon extract
  • 2 34 cups flour
  • 1 12 cups  finely chopped  almonds
  • 1 (14 ounce) bag  Hershey chocolate kisses
  •  powdered sugar
  • 12 cup  semi-sweet chocolate chips
  • 1  tablespoon shortening

Directions

  1. In large bowl, beat butter, sugar and lemon extract until fluffy. Add flour and almonds; beat at low speed until blended. Cover; refrigerate 1 hour.
  2. Shape tablespoonful dough around each candy kiss, covering completely. Roll in hands to form ball.
  3. Bake at 375F on ungreased cookie sheets for 8-12 minutes.
  4. Melt chocolate chips and shortening together over low heat; drizzle over cookies.
