Lemon Jelly

Yields: 5 cups

Ingredients

  • 12 cup lemon juice
  • 1  tablespoon  grated lemon zest
  • 1 12 cups water
  • 4 12 cups sugar
  • 12  ounces  liquid fruit pectin
  • 3 -4  drops  yellow food coloring

Directions

  1. Combine lemon juice, lemon rind and water in a glass bowl and let stand for 10 minutes.
  2. Strain mixture into a large saucepan.
  3. Add sugar to juice mix and stir well.
  4. Bring to a hard boil over high heat, stirring constantly.
  5. Stir in fruit pectin.
  6. Bring back to full boil and cook for 1 minute, stirring constantly.
  7. Remove from heat.
  8. Stir in food coloring.
  9. Skim off foam with metal spoon.
  10. Ladle into hot sterilized jars (I run mine through the dishwasher).
  11. Cover immediately with 1/8 inch hot paraffin.
