Lemon Icebox Sandwich Cookies

Ingredients
- 32 ounces refrigerated sugar cookie dough
Filling
- 1 (16 ounce) box powdered sugar
- 3 tablespoons softened butter
- 4 -5 tablespoons lemon juice
- 4 drops yellow food coloring
Directions
- Prepare and bake sugar cookies as directed on package.
- Sprinkle with coarse sugar.
- Cool.
- Mix ingredients for filling and beat until smooth.
- Spread filling between 2 cookies and chill.
