Lemon Honey Ginger Salad Dressing

Yields: 3/4 cup(approx)
Ingredients
- 1⁄4 cup olive oil
- 1⁄4 cup vegetable oil (or canola oil)
- 1 teaspoon lemon zest
- 3 1⁄2 tablespoons fresh lemon juice
- 2 tablespoons honey
- 2 tablespoons peeled and grated ginger
- 1 small garlic clove
- 1 teaspoon Dijon mustard
- 1⁄4-1⁄2 teaspoon sea salt
Directions
- Add all ingredients to a food processor or blender and pulse until smooth and emulsified and ginger and garlic are minced well.
- Pour into an airtight container(I use a mason jar). Store in fridge. Will keep a few weeks. I love this with spinach salad.
