Lemon Filling

Yields: 2-3 cups
Ingredients
- 1 cup sugar
- 4 tablespoons cornstarch
- 1⁄2 teaspoon salt
- 1 cup water
- 2 tablespoons lemon rind
- 1⁄2 cup lemon juice
- 2 tablespoons butter
Directions
- Mix ingredients in a saucepan.
- Bring to a rolling boil and boil for 1 minute, stirring constantly.
- Remove from heat and cool stirring occasionally.
- Chill before using.
