Ingredients
- 3⁄4 cup shortening
- 1⁄3 cup packed brown sugar
- 1 1⁄4 cups flour
- 1 cup oats
- 1⁄2 teaspoon salt
- 1⁄3 cup raspberry jam
- 4 (8 ounce) packages cream cheese, softened
- 1 1⁄2 cups sugar
- 1⁄4 cup flour
- 4 eggs
- 1⁄4 cup lemon juice
- 1 1⁄2 tablespoon lemons, zest of
Directions
- Cream shortening and brown sugar.
- Add flour, oats, and salt.
- Press dough into greased 13x9 pan.
- Bake at 350° for 15 minutes.
- Spread with jam.
- Beat cream cheese, sugar and flour until fluffy.
- Add eggs, lemon juice, and zest.
- Spoon over the jam.
- Bake at 350° for 35 minutes.
- Cool and then chill.
