Lemon Curd Squares

Yields: 1 8" square pan
Ingredients
- 1 cup flour
- 1⁄4 cup confectioners' sugar
- 1⁄2 cup melted butter
- 1 cup sugar
- 1⁄2 teaspoon baking powder
- 2 slightly beaten eggs
- 2 tablespoons lemon juice
- 2 teaspoons grated lemons, rind of (optional)
- 1⁄2 cup flaked coconut (optional)
Directions
- Mix 1st three.
- Press into an 8" square pan.
- Bake at 350 for 20 minutes.
- Meanwhile, mix all the rest.
- Pour over hot crust.
- Bake 25 more minutes.
- Chill.
- Sprinkle with confex sugar when cold.
