Lemon Cucumber Dressing

I'm always looking for a good salad dressing recipe, and this is good! A great way to use that abundant harvest of cucumbers from the garden. Great over greens and tomatoes.

• Yields: 2 1/2 cups

Ingredients

• 1  cup fresh lemon juice
• 3  large cucumbers, peeled and coarsely chopped
• 3  tablespoons honey
• 3⁄4 teaspoon dried dill
• 3⁄4 cup sunflower seeds
• 1⁄2 cup olive oil
• 4 1⁄2 teaspoons tamari
• 1⁄2 teaspoon garlic powder

Directions

1. Blend in blender all ingredients, except sunflower seeds.
2. While blending, add sunflower seeds.
