Lemon Cream Cookies

Yields: 36-48 cookies
Ingredients
- 1 cup sugar
- 1 cup Crisco shortening
- 3 eggs
- 1 teaspoon lemon extract
- 1 cup heavy cream
- 1⁄2 teaspoon baking powder
- 3 1⁄2 cups flour
- 1 dash salt
Optional for decorating the tops of the cookies
- yellow decorator sugar or confectioners' sugar
Directions
- Cream together Crisco and sugar. Add eggs one at time to the creamed mixture. Add the extract and heavy cream. Add the baking powder to the flour and add the flour mixture to the creamed mixture a little at a time, stirring after each addition. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake at 350 for about 8 - 10 minutes. Cool for only 15 seconds on cookie sheet and remove to cookie rack or paper towels to cool. Sprinkle with yellow decorative sugar or confectioners sugar if desired.
