Lemon Cookies With Icing

I love this recipe. I invented it after trying some delicious store-bought lemon cookies. I've also made these cookies with passion fruit juice and lime juice and they are equally delicious. Show more

  1. Preheat oven to 300*F.
  2. In a medium bowl combine flour and baking soda. Mix well with a wire whisk and set aside.
  3. In a large bowl cream butter and sugar with electric mixer at medium speed until mixture forms a grainy paste. Scrape down sides of bowl, then add yolks, egg and lemon extract/juice. Beat at medium speed until light and fluffy.
  4. Add the flour mixture and mix at low speed just until combined. Do not overmix.
  5. Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake for 16-20 minutes until cookies are slightly brown along edges. Immediately transfer cookies with a spatula to a cool surface.
  6. In a separate bowl, combine powdered sugar and lemon juice until smooth. Apply to cooled cookies and let cookies sit until icing is set.
