Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1⁄4 cup sugar or 1⁄4 cup coconut sugar
- 1⁄4 cup maple syrup
- 1 1⁄2 tablespoons chia seeds
- 1⁄2 teaspoon salt
- 3⁄4 cup almond milk
- 1⁄2 cup oil or 1⁄2 cup applesauce
- 2 lemons
Directions
- Preheat oven to 350 degrees.
- Place muffin liners in muffin tin. Makes approximately 12 muffins.
- In a large bowl combine the flour, baking powder, salt and sugar.
- In a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
- Stir the wet ingredients into the dry. Fold in the Chia seeds.
- Fill muffin tins with the batter.
- Bake for 18 minutes.
