Ingredients
- 3 large eggs
- 3⁄4 cup sugar
- 4 tablespoons lemon juice
- 4 tablespoons butter
- 1 grated lemon, rind of
- 1⁄4 teaspoon salt
Directions
- beat eggs till light.add sugar with lemon juice and grated lemon peel.
- combine in a saucepan with butter and salt.
- cook, stirring constantly until thickened, to a pudding consistency.
- let cool and spread on cake.
- serves 8.
