Lemon Broccoli Chicken

Yields: 4 chicken breasts
Ingredients
- 1 lemon
- 1 tablespoon vegetable oil
- 4 boneless skinless chicken breast halves (about 1 pound)
- 1 (10 3/4ounce) can condensed cream of broccoli soup
- 1⁄4 cup milk
- 1⁄8 teaspoon ground black pepper
Directions
- Cut 4 thin slices of the lemon. Squeeze 2 teaspoons juice from the remaining lemon.
- Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides.
- Stir the soup, milk, lemon juice and black pepper in the skillet and heat to a boil. Top the chicken with the lemon slices. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.
- RECIPE TIPS:
- SERVING SUGGESTION: Serve with steamed sugar snap peas and seasoned long-grain and wild rice mix. For dessert serve frozen yogurt.
