Lemon Blueberry Sauce

Ingredients
- 1 tablespoon cornstarch
- 1⁄3 cup sugar
- 2 cups fresh blueberries or 2 cups frozen blueberries
- 2 tablespoons water
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 2 teaspoons vanilla
- 1⁄8 teaspoon salt
Directions
- In a small saucepan, whisk together the cornstarch and sugar.
- Stir in 1 cup of the blueberries, water, lemon juice, zest, vanilla and salt.
- Cook the mixture over medium heat for 4-5 minutes, until thickened.
- Stir in the remaining blueberries and cook for 2 minutes.
