LEMON BARS

A super easy recipe that can be whipped up quickly and will please the crowd

  1. Preheat oven to 350.
  2. combine cake mix, 2 eggs and butter until blended. Reserve 1/2 cup of this mixture for topping.
  3. Grease a 9 X 13 baking pan. Press remaining mixture into baking pan and bake for about 12 minutes or until edges are turning slightly brown.
  4. in a bowl, beat the cheese, sugar, lemon juice and lemon extract until smooth. Add 2 eggs and beat on low speed until blended. Spread over crust and then crumble reserved topping over top.
  5. Bake for about 12 minutes or until filling is set. Cool on a wire rack for one hour then cut into bars.
  6. Keep refrigerated.
