LEMON BARS

Ingredients
- 1 (18 ounce) package lemon cake mix
- 4 eggs
- 1⁄3 cup melted butter
- 1 (8 ounce) package cream cheese
- 1⁄3 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon lemon extract
Directions
- Preheat oven to 350.
- combine cake mix, 2 eggs and butter until blended. Reserve 1/2 cup of this mixture for topping.
- Grease a 9 X 13 baking pan. Press remaining mixture into baking pan and bake for about 12 minutes or until edges are turning slightly brown.
- in a bowl, beat the cheese, sugar, lemon juice and lemon extract until smooth. Add 2 eggs and beat on low speed until blended. Spread over crust and then crumble reserved topping over top.
- Bake for about 12 minutes or until filling is set. Cool on a wire rack for one hour then cut into bars.
- Keep refrigerated.
