Lemon Bars

Ingredients
- 1 cup butter
- 2 cups flour
- 1⁄2 cup confectioners' sugar
- 4 eggs, Beaten
- 1 3⁄4 cups sugar
- 4 tablespoons flour
- 1⁄2 cup lemon juice
- 1 tablespoon lemon zest
Directions
- Pre-heat oven to 325°.
- For Crust: Blend Butter, 2 Cups of Flour and 1/2 Cup Confectioners' Sugar until flakey. Pat into an ungreased 13x9x2-in. pan. Bake for 18-20 minutes.
- For Filling: Blend 4 Eggs, 1 3/4 Cup Sugar, 4 Tablespoons of Flour, 1/2 Cup of Lemon Juice and 1 Tablespoon of Lemon Zest.
- Remove Crust from oven and cover with filling. Return to oven for another 20 minutes.
- After removingfrom oven, loosen around the edges and sift Confectioners' Sugar over the top while still warm. Cut into squares.
