Lemon and Garlic Potato Salad

A light tasty Egyptian potato salad.

Serves: 5

Ingredients

  • 2 12 lbs  red potatoes
  • 12 cup  chopped parsley
  • 1  garlic clove, minced
  • 2  lemons, juice of
  • 1  tablespoon  vegetable oil
  •  salt and pepper, to taste their size

Directions

  1. Boil potatoes until tender, and cool.
  2. Add remaining ingredients and mix well.
  3. Chill and serve.
