Lemon and Caper Mozzarella

Ingredients
- 12 ounces fresh mozzarella cheese, sliced 1/4-in thick
- 1⁄2 cup extra virgin olive oil
- 2 garlic cloves, crushed
- 1⁄2 teaspoon red pepper flakes
- 1 tablespoon fresh oregano, minced
- 1 tablespoon lemon zest, minced
- sea salt, to taste
- fresh cracked black pepper, to taste
- 3 tablespoons capers, drained and chopped
- 1 lemon
- fresh oregano, stems as garnish
Directions
- Place cheese slices on medium platter.
- Heat olive oil in small saucepan over medium heat. Add garlic and red pepper. Heat until garlic sizzles. Remove from heat. Add oregano, lemon zest, salt, and pepper. Let cool to room temperature.
- Juice lemon and add to mixture. Add capers and seasonings. Drizzle over cheese.
- Top with fresh oregano as garnish.
