Leftover Stir Fry (Green Papaya)

Tonight, a friend was coming over and I asked if they were good with pot luck. So I looked at what I needed to use and found the green papaya. I decided to shred some and create a stir fry with a few other things I needed to use up....the bread was the end of a hearty loaf, the turkey was a bit dry and needed to be used. The rest is just what I made up. It would be great with other veggies added. This particular combination was quite interesting, it was quite close to mu shu, which I love. Serves: 2

Ingredients

  • 1  teaspoon garlic, minced
  • 1  teaspoon ginger, minced
  • 1  tablespoon parsley, chopped (I like flat leaf, use what you have that is green and leafy)
  • 1  cup papaya, shredded (or a root veggie or cabbage or mung bean sprouts or ??)
  • 12 cup  bread, crumbled (preferably a hearty bread, if not use rice or pasta or ??)
  • 14 onion, chopped
  • 14 cup mushroom, sliced
  • 34 cup turkey (beef, fish or whatever you have even an egg)
  • 1  tablespoon canola oil (or the oil you like)
  • 2  tablespoons  oriental sauce (I had a little of one I had used but not finished...if you have none, make it up)

Directions

  1. Heat a wok. If you don't have one, use a large fry pan.
  2. Add the oil, onion, ginger and garlic and stir.
  3. Add the green papaya (or what you have substituted). Stir.
  4. Add the bread, mushrooms and protein. Stir.
  5. Top with the parsley and sauce. Stir.
  6. Serve and enjoy.
