Left-Over Pork Tenderloin Sausage Soup

I was hungry for soup and had a little left-over smoked sausage and a good amount of pork tenderloin. I decided to make soup from what I had in the pantry. I needed to go to the grocery so many items were missing. I decided to make a slightly spicy soup that would taste enough like chili to make my DH happy. Voila! A new hearty recipe was born. Serves: 4-6

Yields: 1 pot soup

Ingredients

  • 12-34 lb  pork tenderloin, cooked and chopped in small pieces
  • 14 lb smoked sausage, cooked and chopped in small pieces
  • 2  tablespoons  vegetable oil
  • 1 (15 ounce) can stewed tomatoes
  • 1 (15 ounce) can hot chili beans
  • 3  tablespoons barley
  • 1 -1 12 quart water
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 1  tablespoon  beef base

Directions

  1. Brown the two meats in the vegetable oil until golden.
  2. Add all the remaining ingredients and simmer until the barley is well cooked.
  3. The soup should be slightly thick.
  4. Enjoy.
