Leek, Potato and Bacon Soup

Ingredients
- 300 g leeks
- 1 medium onion
- 300 g potatoes
- 150 g smoked bacon
- 700 ml vegetable stock or 700 ml chicken stock
- 290 ml milk or 1 cup double cream
- ground black pepper
- olive oil
Directions
- (Saute) Melt butter in a large saucepan over medium heat then add bacon, onion and leeks. Cook, stirring, until onions are soft and not brown.
- Add sliced potatoes to saucepan then pour in enough chicken stock to just barely cover the potatoes. Continue cooking over medium heat until potatoes are tender.
- Add one cup of double cream or 290ml milk
- Use blender to smooth if desired.
- Add salt and black pepper to taste.
- Cook 15 minutes more over low heat, stirring frequently, then remove from heat and serve.
- You could add chives to top of soup if you wish.
- Serve with crusty bread.
