Leek and Shallot Rice

Ingredients
- 1 cup brown rice
- 3 1⁄2 cups water
- 1 tablespoon oil
- 1 shallot, diced
- 4 garlic cloves, diced
- 1 leek, diced
- 4 tablespoons butter
- 1 teaspoon seasoning
Directions
- Bring water, oil, and rice to a boil and then reduce to simmer. Simmer for 40 minutes or until done.
- After rice is cooked melt butter in a skillet and saute leek, shallot, and garlic for about 5 minutes or until tender.
- Add rice and seasoning to butter and saute for 4-5 minutes stirring to prevent rice from burning.
