Lazy Mom's Lasagna

I found this recipe on the DisneyFamily food site. It is way easier than regular lasagna and tastes just as good. My kids don't care for the regular lasagna because they don't like ricotta, but they do love this one! Sometimes, I put some julienne carrots and zucchini in it too. It is very good that way as well as plain. Very much less work involved compared to the usual lasagna. Cooking time includes the 10 minutes for browning the ravioli and to saute' the veggies. Yields: 1 casserole

Ingredients

  • 1 (14 ounce) jar  marinara sauce (I always just use a jar of chunky spaghetti sauce, the chunky green papper one or the chunky garden )
  • 12 lb  sliced mozzarella cheese
  • 12 cup  grated parmesan cheese (I use the kind you sprinkle from a container)
  • 2  tablespoons  vegetable oil (I use olive oil)
  • 1  small onion, minced
  • 2  carrots, julienne style
  • 2  small zucchini, julienne style
  • 2  garlic cloves, minced
  • 1  teaspoon basil
  • 1  teaspoon oregano
  •  sal and pepper
  • 1 (14 ounce) package  frozen  cheese ravioli, unthawed

Directions

  1. Oven to 350 degrees.
  2. Heat oil in 12 inch skillet and saute' onion, carrot and zucchini with seasonings. About 3 minutes or until onion is translucent and veggies are tender.
  3. Transfer to a bowl and set aside until needed.
  4. Arrange the still frozen ravioli into one layer in a large skillet and cook over med. heat without stirring until heated through and beginning to brown on the bottom (gently lift with fork to check).
  5. Remove skillet from heat and carefully transfer ravioli to a single layer in a large casserole dish.
  6. Sprinkle with the onion and veggie mixture.
  7. Layer sauce evenly over ravioli and veggies.
  8. Arrange cheese slices over all and sprinkle the whole thing with parmesan cheese.
  9. Bake in middle of oven until cheese is melted and casserole is bubbly, about 10-15 minutes.
  10. Serve with a salad and garlic bread sticks.
  11. Pour the marinara or spaghetti sauce (whichever you are using) evenly over the ravioli and veggies.
